I think my house is haunted. Seriously. The last few weeks, some really strange things have happened. Yesterday was the final straw, so to speak. Hubby and I got out our Christmas decorations. I have a few of my mom's old Christmas ornaments left. They are those old colored glass balls. Taking a trip down memory lane, I pulled one of those ornaments out of a bag, and I was telling hubby about how when my siblings and I were younger, we'd have to be extra careful hanging the ornaments up so they wouldn't break. All of a sudden, the ornament explodes, and the pictures of my mom, dad, and grandmother went flying off the wall. AT THE SAME TIME! It sounded like a tiny bomb went off and glass was everywhere! I decided then, maybe we should forget about Christmas this year. Hubby disagrees. Me? I went into my kitchen and started to cook dinner.
The other day, I took out a ham and cooked it. I didn't do anything fancy-smancy to the ham. Took off the plastic, rinsed it off, put it in a roasting pan and slow cooked it all day. YUM!
So, I decided to make something out of the left over ham. No photos. I was shaking too hard from the ornament blowing up to do that. Here is what I did:
Cut chucks off of ham and diced it up.
Peeled about 5 potatoes, rinsed, and sliced them up.
Took 1 med. onion and diced it up
Put that in a big bowl and added one can of cream of mushroom soup and one can of milk.
Then I added about 1-1 1/2 cups of sharp cheddar cheese.
Mixed that all up, added some salt and pepper to taste and poured it into a baking dish.
Topped with another cup or so of the cheddar, covered with foil. Place in 375 degree oven for about an hour or until the potatoes are tender.
Next time I make it, I'll be sure to take photos and post. It was so good, warm and creamy. Great for a chilly night like we had.
