Pork steaks with Rice

What does a mom do when she is sick?  She continues on until she drops.  James and I have been fighting this....whatever it is, since Friday last.  I think it's winning, cause we're both too tired to care.  However, dinner MUST be cooked.  Or the teenage boy whines and cries about not having food to eat.

The thought of standing over a hot stove when I can hardly stand and the temps outside are cooler than in the house, almost did me in.  Not that I had the heat on, it was 80 degree here yesterday and I flat refused to turn on the AC.  Taking a long look around my kitchen I spotted my long lost friend "Crock Pot" and attempted to do the "Happy Dance", but became very dizzy so had to sit down for a bit.

James took out (for yet another night) pork steaks.  The man could live off pork and potatoes!    Not feeling the desire to sit and pour over recipes, I looked in my pantry and grabbed a few items and went to work....fast, so I could go lie down.

The cast.  Pork steaks, onion soup mix, cream of chicken soup, and diced tomatoes.





Pork Steak with Rice (OR: "I don't care if it taste good or not, it's dinner, it's done.  Eat it or starve" recipe).

1 package of pork steaks
1 packet of onion soup mix
1 can of cream of chicken soup
1 can of diced tomatoes
salt and pepper to taste

Take port steaks place inside crock pot.  Add salt and pepper.   Dump diced tomatoes on pork steaks.  Mix soups with 1 can of water and pour onto steaks and tomatoes.  Place lid on top, set at "HIGH", and walk away.

The Rice
1 cup of long grain rice
1 small onion, diced
1 1/2 teaspoons garlic, mined (mine is in a jar)
1 packet onion soup mix
1 bag frozen peas
1 tablespoon butter
1 tablespoon olive or canola oil
4-5 chicken bouillon cubes
1-2 cups of water

Melt butter and oil in pot, add onion and garlic and cook for 2-3 minutes.  In a measuring cup, add 1 1/2 cups of hot water, the chicken bouillon cubes, and the onion soup mix.  Place in microwave for 3 minutes.   In the pot add the uncooked rice and stir for about a minute or so.  Add the liquid and stir.  Add another 1/2 to 1 cup of hot water to rice, if needed.  Let that come to a boil, place lid on pot, turn to low and let it cook until all the liquid is almost absorbed.  Add the peas, replace lid.  Turn the stove off and let stand for about 5-10 minutes.

NOTE:  The soups contain a LOT of salt, so I recommend NOT adding salt and if you do, add very little.


This turned out better than I thought it would.  Hope you enjoy it too.  Now, I'm off to my bed. :)
